SPELT BLUEBERRY LOAF

1 ½ c Rice Bran Flour
1/8 c currants or dried blueberries
¾ c Spelt flour
½ c hot water
1 ½ tsp. baking powder
¼ c molasses
1 apple grated
1 tsp. grated fresh ginger
2 tsp. barley malt powder or syrup or agave syrup
¾ tsp cinnamon
2 tbls. Arrowroot powder

Preheat oven to 425 F. Mix dry ingredients, including dried fruit, together in a large bowl. Mix moist ingredients and then add to dry ingredients. Pour batter into muffin pans lined with paper baking cups. Bake about 13 to 15 minutes.
